Sprinkle salt and pepper on both sides of the steak meat, which has been brought to room temperature.
Heat the griddle and when it starts to smoke slightly, grill the meat side down, which will be the front side.
When done cooking both sides, 4 to 5 minutes per side, wrap in aluminum foil.
When done, insert a knife along the bone and cut into bite-size pieces!
